Grass Fed Beef Brain

Beef brain is commonly overlooked but is a delicate organ full of vitamins. Brain does well in a fried batter or sautéed with mushrooms and onions, but also serve as a lovely filling for raviolis or mixed into the sauce of a casserole. They are used as a thickener in headcheese and are so fatty they can be used in an emulsion.
